My sister-in-law made these one Christmas from her mother's recipe, and though
we were surrounded by tons sweet things, Paradise Cakes really stood out.
They're rich and delicious.
The Pastry
- 4 oz flour
- 2 oz margarine
- a pinch of salt
- cold water
- raspberry jam
Rub Margarine into flour and make into a stiff paste with cold water.
Line a swiss roll tin and spread thinly with raspberry jam.
The Filling
- 4 oz margarine
- 4 oz confectioners sugar
- 1 egg
- a teacup of sultanas
- 2 tablespoons of ground almonds
- 2 tablespoons of chopped walnuts
- 2 tablespoons of glace cherries
- 2 tablespoons of semolina
- a few drops of vanilla
Cream margarine and sugar. Add egg and vanilla. Mix everything else in.
Spread on pastry. Bake at 325 degrees for 35 minutes.
Dredge with confectioners sugar and cut into squares before they cool.
